Farmer Brown's Chicken!

Grown on natural vegetable grain and pasture grasses, our roasting chickens spend their days outside foraging and scratching in the field, sunbathing and running as they please! We don't give them antibiotics or growth hormone supplements.   Raising chickens this way takes much longer than commercially raised chicken and results in a well muscled, large bird full of unmatched flavor and texture.  The humane care and treatment of the animals is of the utmost importance to us.  We believe that the livestock we raise should live as the creatures they are, just like small family farms have done for generations before factory farming became common place.  We only raise roasting chickens for three seasons as we don't confine the birds and they are not able to live outdoors in our winter climate.  Our chickens are processed in a provincially inspected facility.

"Farm Fresh Roast Chicken"

From our farm to your table...

My tried and true recipe for perfect roast chicken.

 

Start with a Farmer Brown's Chicken!

In a bowl combine:

1 Lemon, cut in half

2-3 cloves Garlic, peeled

Several sprigs fresh Thyme or 1 tbsp dried

A few sprinkles of coarse sea salt

1/4 cup -ish of Olive Oil

Mix together with a spoon and set aside.

 

Preheat Oven to 375 degrees

Remove giblets and neck if they are inside the bird. Rub the bird with the Garlic and Lemon mixture,

rub one of the lemon halves all over the skin.  Place all seasonings inside the bird cavity.  Place the

bird breast side up on a rack in a roasting pan.  Brush (or spread with your hands) the remaining oil 

all over the skin.  Sprinkle evenly with paprika, I also sprinkle with Clubhouse Roasted Red Pepper

and Garlic One-Step Seasoning. 

Roast, uncovered for approximately 1-1 1/2 hrs (for a 6lb bird-adjust time for size) I always use a

meat thermometer to check doneness.  The internal temp should read 180 degrees.
